Gelato is an ancient Italian frozen dessert dating back to Ancient Rome and Egypt. Gelato is made with some of the same ingredients as ice cream, including milk, cream, various sugars, fruit and nut purees.
Gelato is different than ice cream because it has lower butterfat content. Gelato typically contains 4-8% butterfat, versus 14% for ice cream in the United States.
Gelato also contains less air than ice cream so it is denser and has more intense flavors.
